.....and now i have an '81 SR5 all stock, like down to the steel center caps and chrome rings on the tires.... still undecided as to keep it stock or what....
Keep it "in the vein of" stock. Make it look like it could have been a stock option, and hide anything that isn't stock. Steal from similar years of other vehicles like Celicas and such. Clean up details around the truck so it feels more like a period-correct concept vehicle (like Chip Foose would do). There's so much you could do, it just takes deciding on a direction and keeping with a theme. Also pics.
