What would be the best things for me to do to get more power out of my 20r engine from my 78 long bed? All i can think of that does not take loads of time and money is a weber carb and new headers/ exhaust.. anything else?

besides the weber and header you can port match the intake to the gasket and smooth the intake runners to help the air flow

There's a guy in Portland Or that makes 3 different cams for the 20R engine, he sells them on Ebay for $128, I called and talked with him (very knowledgable) and I bought a torker cam from him last week, and my 78 has noticable power increase

you could slip a 22r block (81-84 only) undernieth the 20r head , and have a hybrid .. blocks are a dime a dozen .. just takes a little time and effort
